2 lbs. frozen hashbrowns (I like the square but any work)
6 oz sour cream
1/2 cup chopped onion
1/2 tsp pepper
1/2 cup melted butter
1 can cream of chicken soup
1 tsp salt
2 cups shredded cheese

mix everything together (hashbrowns last is easiest)

bake at 350′ for 45 mins or do in crock pot.  Either way spray w/cooking spray to make it easier to clean.

This one is from my neighbor and is perfect for a potluck!




Hmmm…seem to be on a potato kick…

  • Potatoes
  • Butter/Margarine
  • Seasoning salt

Cut raw potatoes in half.  Using knife, cut several slits down the length of flesh.  Butter flesh of all halves.  Sprinkle with season salt.  Bake in 350′ oven for 30-60 minutes depending on size of potatoes.

These are my husbands fave.  We add even more butter when eating!  Enjoy!


  • Prepared Mashed Potatoes
  • Shredded Cheese
  • Cooked crisp Bacon
  • Toppings of your choice

After Mashed Potatoes are prepared according to directions, add shredded cheese, crumbled bacon, etc…  Stir and serve!

I LOVE to make something delicious that seems a little bit special but is embarrasingly easy!  Enjoy!


  • Baked Potatoes
  • 1 stick Butter/Margarine
  • 1 lb Crisp cooked bacon
  • Shredded Cheese
  • Toppings of your choice

Let baked potatoes cool only until you are able to handle them.  Slice just the side off of each.  Scoop out most of the potato with spoon or melon baller and toss it into a large bowl.  Add butter and mash potatoes.  Add bacon, cheese and any other desired topping.  Replace potato mix back into potato shells.  (Will not all fit…we use extra for our young son who won’t eat skins)  Put back in oven for about 20 minutes at 350′.
