 frozen bean and cheese burritos 

with red and green enchilada sauces poured over top and baked with additional cheese on top.

  • leftover chicken or a can of chicken if desperate!
  • can of re-fried beans
  • can of enchilada sauce
  • Flour tortillas
  • Shredded cheese

Preheat oven to 350′.  Put a spoonful of re-fried beans and chicken in each tortilla, spreading in a line down the center.  Roll up individually and place in a 10×13″ casserole dish.  Pour Sauce over the top.  Sprinkle with cheese.  Bake about 40 minutes or until bubbly and melty!



  • 1 lb Ground Turkey
  • Large sized refrigerator biscuits
  • Taco Seasoning (I buy bulk and sprinkle freely!)
  • 1jar Cheese and Salsa dip (often called Queso)
  • 1 can chopped tomatoes and chilis

Brown Ground Turkey.  Add seasoning packet or perferred amount of seasoning and recommended water.  Follow package directions.   In the meantime, seperate biscuits and flatten.  Add turkey mix by TBS to each round and fold over, pressing to seal edges.  To the remaining turkey mix add cheese and tomato/chilis and simmer.  Bake empanadas about 10 minutes until biscuits are golden.  Serve topped with cheese sauce. 

This is a favorite of ours!  We love any food that is spicy and any food that is mexican.  So, obviously, this is a winner in my home.  Enjoy!
